What makes rice stick together when you cook it?

One or two reasons: 1. The rice is overcooked. 2. Sometimes the residue left from the starch in rice makes a pastey-type film; this causes the grains to stick together.

Sugar or carbohydrate. There is no gluten in rice, so it has to be the carbs. I find that whole grain brown rice sticks together less than white. But I like sticky rice, so it doesn't really matter either way.

Rice, especially white rice is high in starch. If you over-cook it, it tends to form a paste from this starch that makes it stick together.

Rice itself is starchy during cooking process so the right amount of water you add to cook must be precise/moderate. If you find it troublesome cooking then you can steam it instead but the taste is slightly different.

Avoid stirring rice while cooking it to minimise squashing out starch. And after cooking it, rinse it off with some clean boiled water. This will minimise stickiness. And don't overcook it!
