The side that faces you when you take it out of the toaster and place it on your plate. Much like the flip of a coin, either one side or the other will come up when it lands. That's the top side.

where you usually butter, jam or place fillings (meat, cheese, lettuce etc ) on it, that side faces you when you eat it. Yummy!!

It's the side that hits the floor when you drop it. If you want to make sure you always butter the proper side, drop it on the floor first.
