What is the simplest way of making yeast for wine-making?

One way I have heard is to leave a grape out and break the skin. Yeast will appear within a few days and then you put it in a strong sugar solution.

I don't believe you use yeast in making wine, you use it in making beer, however. Yeast is a live organism and you can't make it. In cooking we usually purchase dehydrated yeast spores and rehydrate them with water and sugar to activate them. I would assume that brewers yeast for making beer can be reconstituted this way or you can activate yeast and keep it in the refrigerator like it is done to make sour dough bread.

Many monasteries simply leave their beer or wine wort open to the air as wild yeast is prevalent in the air
