Yeast is actually a fungus. There are 1,500 different species but the most common one is the one that is used for baking and alcoholic beverages, for example beer. It is called cerevisiae. It is also used in cell research and is the most widely researches yeast.

This is a top fermenting yeast in that it rises to the top of the beer as it ferments. Top fermenting yeast is the one that is used for making Ale type beers. These are very popular throughout Europe and the USA. This yeast is used widely for baking and also for cell research.

Brettanomyces is another form of yeast which will produce a strangely sour taste in a beer. It is viewed as a contaminate by many beer brands but some, notably Belgian ales welcome its taste.

Lager is a bottom fermenting yeast and is made by putting the beer in a cold temperature to ferment, the Bavarians used caves for this purpose, this killed all but a few of the yeasts and left the lager yeasts at the bottom of the mix to continue fermenting. This practice was perfected by the Bavarians. The yeast was then stolen and taken to Germany. This allowed the famous lager beer to be shared and exported to many countries.

Lambic yeasts are wild strains that are used for beers of that name. They are generally used by Belgian beer makers. These strains were originally found in streams around Brussels. However now they can be obtained throughout the world.

Yeast is used for fermentation. This is how you get the content in beer and this is when the mixture finally becomes beer. Before this the mixture is known as wort. Fermentation starts as soon as yeast is added to the mix. The yeast feeds off the sugars in the malt and produce alcohol.

You can obtain it in solid from, cakes or dried powder form. You can get it in your local grocery store, specialized baking, or culinary store and even on line. There are many websites specializing in home brewing and supplies. Different types of yeast will give you different varieties of taste and consistency.
