When the BIG day is over and we still have turkey in the refrigerator, the thought of a week of leftovers is almost too much to bear. At my house, it is planned for, looked forward too and blessing in disguise. I even buy an extra turkey, to make sure that I have enough leftovers.
You think I am crazy don't you?  When you hear why I go to such great lengths to have leftovers, you will be making an extra trip to the grocery store, to pick up one more turkey too!

 Just think of all of the times that the extra turkey that you make can give you an extra meal and you won't have to cook.

 Just think of all of the times that you can do things with your family and still have a meal ready when you get home, thanks to the slow cooker in the kitchen.

 Just think of all of the times that you can have friends over, at the spur of the moment, and have a meal ready in almost 'no time at all'.

Just think of all of the Christmas shopping days ahead when you would be glad to have something ready when you get home.

 You can be the envy of all of your friends for thinking ahead and being so wise.

 These are only a few of the things that you can make with leftover turkey:

Turkey Stew- plain or over egg noodles
Hot Turkey over bread with mashed potatoes

Grilled Turkey and cheese sandwiches

Turkey and bacon Clubhouse Sandwiches
Turkey Subs
Turkey Tacos-really great

Turkey, cheese and tomato wraps
and best of all-another Turkey Dinner

Planning ahead can give you countless numbers of 'no cooking' nights and days off from the normal routine. You can do this with beef roast, ham or any other meat that you prepare. If you are going to take the time to make one, why not make two, and give yourself a night off?
