When I was a kid growing up this was one of the songs we learned to sing in good old P.S. 81. There was never a lot of pie baking in our household, matter of fact there was never really much baking unless my grandmother did it. We had such wonderful bakeries back in Brooklyn in those days with great pastries from the old world because many European immigrants owned these bakeries and wonderful crusty breads and rolls of every kind.

These are really hard to find now unless you live in large cities. Here in Kentucky it is almost impossible to find and when I do go somewhere and find the bread and rolls I load up and bring them back to our freezer. In the winter time I still make our homemade bread and rolls because we cannot stand "store bought bread" and today's bread machines do real well. The pastries and pies I can usually manage all year round. We do not eat a lot of cake any more since the kids have grown up, but Carl is a pastry and pie kind of guy so even at 73 years of age I still keep my hand in and bake him a pie now and then.

One of his favorites is Cherry Pie and if one is lucky enough to have a cherry tree or has access to fresh cherries and is willing to go to trouble of pitting fresh cherries then one will be able to taste a cherry pie like they never have because there is nothing in the world like fresh cherries.

Here is my recipe for a Simple Cherry Pie

1. Preheat your oven to 425°F and line the bottom of your pie pan with your favorite pie crust recipe.

2. Pick, wash and pit enough cherries to make 4 cups and put them in a bowl with 1 cup of sugar. If you have really sour cherries add another ¼ cup of sugar. Next gently fold in ¼ cup of flour and ½ tsp. of cinnamon.

3. Pour all into your bottom pie crust.

4. Cover with a top crust, make air slits and crimp edges.

5. Bake at 425°F for 25 minutes and reduce heat to 350° and bake for another 25 to 30 minutes until your crust is golden brown and the cherries are bubbling through the slits.

6. While cheerfully doing all this sing, "Can she bake a cherry pie, Billy Boy, Billy Boy? Can she bake a cherry pie darling Billy? Yes, she can bake a cherry pie, quick as a cat can blink an eye. She's a young thing, but cannot leave her mother!"
