For those of you who love French or Mediterranean cooking or for those of you who have an organic herb garden then making Herbes Salees may be something you all ready know about. Basically salted herbs were the mainstay of traditional Arcadian Cuisine and often chopped onions were added to the Herb Salees recipe. Since I lived for many years on the Canadian border I became acquainted this unique food enhancer and whenever I used to go to Canada and especially Nova Scotia much of the food I ate were enhanced with Herbes Salees.
For those of you who do not know about the great value of keeping Herbes Salees on hand then this article is for you.
I love making this and keep it on hand for use in future soups, sauces or omelettes. I often prepare them with some Herbs Salees which I have made ahead and keep in the refrigerator for such a time as I need it.
Over the years I have created my own Herbes Salees and this is my simple recipe once my Mediterranean herb garden is producing.
First I set aside 1/4 to 1/2 cup of kosher salt or any other kind of coarse salt you may have on hand. Do not use iodized salt.
I chop up the following:
1 cup of fresh savory
1 cup of fresh chervil
1 cup of fresh parsley
And I mix them with
1 cup of chopped green onions or a sweet Vidalia onion
1 cup of grated carrots
1 cup of celery leaves
Now I get a small crock or bowl that I can put some sort of lid on top of and I put in about 1 inch of the above mixture and sprinkle on some salt. I continue doing this, layer upon layer, until I have used up all the above mixture and each time I sprinkle salt between the layers.
Next I cover the top of the crock or bowl and I put it into my refrigerator for 14 days. When I remove I gently drain off any liquid that has accumulated and I pack the Herbes Salees mixture into small sterilized jars.
This recipe makes about 5 or 6 cups and I keep refrigerated until I need them. This makes a really neat gift at Christmas time and I usually attach a few recipe cards with it and it creates quite a hit.
