Now that the fall harvest is over and the apples are picked and stored for the winter we can sit back and relax. The weather chills a little more each day, the holidays are coming up on us and life again becomes a little more hectic.

Those of us who have orchards are blessed and those of us who do not simply have our favorite produce market.

Sometimes we find it hard to fill in a space with some good home cooking. Many of my recipes are complicated, but excellent. Some are time consuming and years ago there was more time for them. However, today's life, at least for today's homemaker does not have the luxury of time for cooking since many of them have to go out to work each day to help their spouses make ends meet.

I can remember the walking into the Home Place kitchen and smelling Hazel's wonderful apple pie and knowing it was going to be part of the day's noon meal along with great New York or nearby Vermont 's Cheddar cheese.

Over the years I have taken some of my recipes and made them easier for me and since I still love the smell of apple pie, but do not have all the mouths to feed this Quick and Easy Apple Tart is the result of one of those recipes.

I used to make this on our gas grill until I got rid of it and I can still make it directly on my oven pizza stone or even in our microwave when I want to bring the memory back for just the two of us now that all the kids are gone.

For each individual serving I take a large soft flour tortilla shell and sprinkle some grated cheddar cheese on it. Then I use my apple corer/slicer on a good crisp Granny Smith apple that I have washed well. Once it is sectioned I usually slice up the sections to thinner slices and arrange on top of the cheddar cheese.

If I am using the microwave I "nuke" it for about 45 seconds on high. If I am using a the pizza stone in my oven, I preheat oven and stone to 400 F and then put in about 4 of these tarts for about 3 to 5 minutes.

When I remove I may add some homemade strawberry jam on top and then cut in quarters with my pizza cutter.

Sometimes I make this without the cheddar cheese and just sprinkle some cinnamon and sugar on top of the apples which I have dotted with some cut up cubes of butter, (not margarine, please)

This is a great fall or winter evening treat that you can make with the kids when you want something special and a warm glass of good fresh apple cider that you have spiced up will be just the finishing touch.
