1 1/2 C boiling water poured over 1C oats (quick or long cooking long cooking makes a heartier texture) and let stand 20 minutes
Cream together: 1 C margarine, 1C brown sugar, 1 C white sugar
Add: 2 eggs beating in then 1 tsp cinnamon, 1 tsp baking soda, 1 tsp baking powder sprinkle the last 3 over the top and mix again.
Add oats,1/2 C wheat germ, 1/2 C walnuts chopped plus 1 C whole wheat flour mixed with 1 tsp salt.
Bake in greased or pam sprayed cake pan 350 degrees for 35-40 minutes or intil a toothpick inserted into the middle comes out clean.
Frosting:
1 C brown sugar, 1/4C margarine or butter,1/2 C pet milk,1/2 tsp vanilla. Stir and boil 3 minutes. Add one C chopped nuts, 1 C shredded coconut and mix in. Spread on cake when cooled.
May also use prepared German Chocolate cake frosting or cream cheese frosting. Great topped with cool whip or ice cream too.
