1 square chocolate (bitter chocolate like Baker's chocolate)
1 tsp vanilla (try almost extract for a change and a treat!)
Eggbeaters the equivalent of 2 whole eggs
Cream butter and sugar until light and fluffy. Melt the chocolate, cool and add to the butter mixture. Add the eggs and beat 6 more minutes. This mixture is not cooked but having Eggbeaters means the eggs are pasteurized and no salmonella risk like you'd have with fresh, whole eggs.
Use spatula to put into a baked pie shell (good in graham cracker or short bread purchased crust too or make your favorite and bake first before adding filling) Chill until set and top with Cool Whip or a dab of French Vanilla ice cream.
This pie is totally delicious and melt in your mouth. It is a real treat for chocolate lovers. Best to make two because it will not last very long!

I had to quit making this for a time (because of the salmonella issues and me being an old infection control RN) BUT with the advent of eggbeaters which (I think) are pasturized it is not an issue! This pie is incredible - one more that I haven't posted rivals this - my pumpkin ice cream pie which I will post soon. Enjoy! Marijo
Yum! Marijo! My sister in law used to make a delicious French Silk Pie. From what I remember, this is really close to what she did. Now, remembering it, I'm gonna have to make one.
