Marijo's Cherry Cheese Cake Pie

3/4pound cream cheese (may use low fat or no fat to conserve excess fat calories)

1/2C sugar

3 large eggs separated

1 tsp vanilla

1/2tsp almond extract

1 graham cracker, chocolate, or short bread purchased crust place in frig at least 30 minutes to chill

1 can cherry pie filling may use one sweetened with Splenda if you like

Blend cream cheese and sugar using a spoon or mixer. Beat egg yolks until thick and lemon colored. Stir into cheese mixture along with vanilla and almost extracts.

Beat egg whites until they stand up in soft peaks. Fold egg whites into the filling. Pour into chilled crust. Bake at 325 degrees for 40 minutes or until it is firm over the top. Cool and then spread top with cherry pie filling.

May also use blueberry pie filling for a change in taste. Haven't tried apple but it is a thought too.

I hope the copy you printed out had the amount of cream cheese and sugar - when I went back in to read your comment it was gone - each time I use fractions in a recipe even those it is there when I copy it - it disappears....SORRY! Marijo

Hi Marijo! Your recipes are making my mouth water. I love cheese cake and so does my son. So...I'm going to have to try this recipe this weekend. I know it won't be as good as yours, but I'll let you know how it turned out anyway.

Family on my mom's side were all (including 4 boys) good cooks and I have those passed down recipes! Thanks for reading and commenting AND for joining my Fan Club. Maybe my column one should be Recipes for Life (and I am not taking cheese cake here?!) Marijo (Mary Jo)
