Marijo's Date Nut Bars and Coconut Square Bars

Marijo's Date Nut Bars

1C firmly packed brown sugar

     3/4C sifted flour may use whole wheat flour

     1/2tsp baking powder

      1/2tsp salt

2 eggs, well beaten

2 Tbsp melted butter

1 C chopped walnuts or pecans

1 C chopped dates

    1/2tsp vanilla extract

Sift flour with baking powder and salt into mixing bowl. Add brown sugar and mix well. Add eggs and butter and mix again. Stir in nuts, dates and vanilla extract. Spread in a well greased 11" X 7" pan or an 8" square pan. Bake at 350 degrees for 25-30 minutes. Cut bars while still warm and roll in powdered sugar if you desire. These are great topped with French vanilla ice cream.

Marijo's Coconut Squares

Bottom layer:

Cream together:

     1/2C butter

      1/2C brown sugar

Add 1 C sifted flour to the above and mix.

Place in an 8X8 pan and bake 10 minutes at 350 degrees. Cool slightly.

Top layer:

2 beaten eggs

1 C brown sugar

1 tsp vanilla

2 Tbsp flour

1 tsp baking powder

     1/2tsp salt

Sift the above together and stir in:

1 C coconut (flaked)

1 C chopped nuts

Add flour mixture to egg and sugar mixture and mix. Spread on cooled bottom layer and bake 25-30 minutes at 305 degrees. Cut and remove from pan while still warm.

the middle of a mountain meadow. She is wanting to spread the good news

about His redemptive plan for our lives through written media. Her name

is pronounced Mary Jo (her dad got cute with the spelling of it). She

was an RN for 23+ years, missionary with YWAM then statistical analyst

for Every Home for Christ over 9 years. She had her first poem

published when she was four years old (her mom might have had more than

a little to do with that!) She has been writing ever since. You can find more of her

I am crazy about dates and will eat anything with coconut so, you can just guess that i am definitely baking these. Thanks for sharing.

I see this website cut off some of the measurements again - I have checked several times and then the fractions disappear - will correct and hope you can print out when it is behaving! Thanks Nenita! Marijo

Marijo, a good article and sounds delicious. But I'm not an accomplished cook. I could take those two bean eggs and fry a plain omelet though. Good work, keep it up.

SOme of these family recipes I haven't made in years - I have posted some lower fat ones - check out the black forest cake! Marijo
