Marijo's Soft Oatmeal, Date, Nut Cookies

1 C dates
 
1 tsp cinnamon

2 eggs

2 C flour

2 C oatmeal

1/2 tsp nutmeg

1/4 tsp ground cloves

1 tsp vanilla

1 tsp salt

1 tsp soda

1 C shortening – may use margarine

1 C nuts

1 C sugar

Cover the dates with water and simmer for 10 minutes. SAVE 1/3 C of the date water and the dates and toss the rest of the water you used to cook the dates in. Sift flour, soda, salt, cinnamon, nutmeg and cloves.

Gradually add the sugar to the shortening and cream. Add eggs and vanilla and beat. Stir in the dates and 1/3 C date water.  Lastly add in the dry ingredients, rolled oats and nuts. Mix until dry ingredients are well moistened..

Drop by teaspoonful on greased baking sheet and bake at 350 degrees for 10-12 minutes.

is pronounced Mary Jo (her dad got cute with the spelling of it). She

was an RN for 23+ years, missionary with YWAM then statistical analyst

for Every Home for Christ over 9 years. She had her first poem

published when she was four years old (her mom might have had more than

Boy, that sounds good. I'd make some of these, but my son is allergic to nuts. That is too bad because I love nuts.

Yum! Marijo! I'd leave out the dates, but yum! You are making it really hard to stick with a lower carb eating plan!!

Look up the chocolate fluffy stuff (chocolate mousse?) one - delicious and can be very low carb if you find the right Cool Whip! Thanks for coming and reading! Marijo

PS the Chocolate Almond Cake is low carb (get ready to scroll - I posted that one awhile ago) and the banana bran muffins have no flour - just oat bran, wheat bran and flax seed meal and they are wonderful! You could use Splenda too - I use the Splenda and brown sugar combo but very little... ENJOY - will try to do more low carb recipes coming up. Marijo

I love dates and oatmeal. I never tried baking with dates, but they are a great source of natural fruit sugar. I wonder if some of the transfat free margarines would work well with this recipe. Thank you!

Marijo, I see two books in your future - a cook book and a devotional - you are quite popular :-) Blessings! Teresa PS Packing is coming along slowly, but this weekend I am picking up the pace. Our landlord has a for rent sign up so now I must keep everything in order. I'm going to try to sneak a write in too. Sigh. Too busy.
